After 20 years of Italian cooking classes in Florence and abroad I consider myself quite a "veteran". Throughout these years I've seen big changes in the food industry and tv shows have contributed a lot to the people's food education.

A real foodie already knows how to prepare bruschetta and tiramisu. So if you are in Florence, why don't you book a class on olive oil and traditional balsamic vinegar: I will teach you how to identify aromas and flavours and even defects.

We will then move to the kitchen and use these two wonderful ingredients to prepare the most delightful and tasty italian meal.

Your day with me begins with a visit to Sant'Ambrogio, which is nowadays the most traditional food market in Florence. We stop at the prosciutto and cheese vendors to buy local specialties which you'll taste during the "aperitivo", the short break we take while cooking.

We finally walk to OLIO - THE FLORENCE SCHOOL OF OLIVE OIL and I'll show you how to select the "best olive oil". Finally we move to the kitchen, where we'll cook a complete Italian menu, from hand-made pasta, (or gnocchi, or risotto, depending on the season) to a meat course with side dish and dessert.
You also enjoy a slice of focaccia, some salami and a glass of wine while I complete the meal preparation. Your final touch is to cook the pasta al dente.
and then sit down in the dining room and enjoy a well deserved glas of wine together with the meal you prepared, I hope you feel at home and have a good time!
